Malagasy Cuisine — Lasary Voatabia: Tomato and Green Onion Salad

Lasary (recipe follows) is a specialty of the highlands of Madagascar, where it is enjoyed as a side dish or maybe as a topping on a baguette sandwich.  Tomatoes and green onions join forces in this fresh, simple, tasty salad.

Lasary Voatabia

adapted from the University of Pennsylvania’s Africa Cookbook project

  • 1 large green onion, thinly sliced
  • 2 Roma tomatoes, diced
  • 1/2 tsp. salt
  • 1/4 tsp Tapatio hot sauce

All ingredients were put into a bowl and stirred to combine:


The bowl was covered and refrigerated while we prepared the rest of our Malagasy meal.

As an elegant side dish, lasary was a welcome addition to our Malagasy table.
